Ingredients for Vegetable Pulao

(1 cup = 250 grams)

Basmati rice                             500 grams

Pure Ghee                                 100 grams

Peas                                         100 grams

Beans                                       100 grams

Carrot                                       01 chopped

Cauliflower                                100 grams

Onion                                       01 sliced

Green Cardamom                      03

Cloves                                      4-5

Cinnamon (Dalchini)                   1 inch

Bay leaves                                3 nos

Star anise                                 01

Cashew                         6-8

Raisins                           10-12

Green chilies                             2-3 (chopped)

Cumin  seeds                            01 tsp

Chili powder                              1/2 Tsp

Turmeric powder                        1/2 tsp

Lemon juice                              01 Tsp

Salt                                          as needed

Water                                        02 cups

Fresh green coriander leaves     for garnishing


How to make Vegetable Pulao

  • To make Vegetable Pulao, first, make a paste of ginger garlic and keep it aside.
  • Heat the oil in a deep pan, add chopped vegetables and saute it. Now add paneer in it and saute a bit and keep aside.
  • Put 2 tablespoons of ghee in another pan and heat it, now add a bay leaf, then add cumin, star anise, cinnamon, cloves, cardamom, cashews and saute.  add chopped onion and green chilies, after a few saute, add ginger garlic paste. and saute until the onions become soft. add Chili powder, Turmeric powder and fry it.
  • Now add dry Basmati rice and fry for about 3 minutes.
  • Add fried vegetables and salt as needed, and stir well.
  • Now add water, close the lid of the pan and cook until the rice is cooked.
  • Garnish with coriander leaves and serve hot with Green chutney, daal or Raita. Read also.
